Buttery on the nose with a light barnyard note along the rind — almost mushroomy, exactly as the monger described. The paste stayed surprisingly firm even after 20 minutes warming at room temp, with a slightly waxy feel and a thick, structured rind. Flavor leans mild to the point of being almost polite. Slight lemon rind and sweet bread come through lightly, but the mushroom and butter promised by the aroma don't carry into the taste. Nothing lingers long enough to feel truly memorable. A lovely picnic cheese — if you're building a crowd-pleasing board that won't offend anyone, this absolutely works. For me, it lands firmly in the category of a good cheese, just not a repeat obsession. Purchased from Murray's Cheese.
