Button mushroom on the rind with fresh cellar notes, compared to the tasting notes of sun-dried wheat and sweet cream. The paste smells of sweet cream and light citrus aromatics — limited buttery notes or sweetness for a triple crème. Delicate and light throughout. The center and edges are a lovely cascade of texture differences — the center almost cream cheese-like at 60°F, while the edges were decidedly creamy with flavors of sweet bread and citrus. Paired with high-quality honey (Arshot Southern Honey) and fresh sourdough. This is all this cheese needs — the honey brightens up the stiff center beautifully.
