Meadow Creek Dairy, Galax, Virginia. Raw cow's milk, farmstead Jersey herd, alpine-style inspired by Comté. Aged 6-9 months, washed rind. Only 650 wheels per year, made April through November when cows are on pasture. 14-15 lb wheels. Purchased from Yellow Umbrella Provisions, Richmond VA. $30.95/lb, 0.41 lb wedge = $12.69. Very wet out of the package with a big Parmesan-like nose pushing into floral notes. Great tyrosine crystals in the paste. Semi-hard texture dissolves nicely, leaves mouth watering. Rich flavor that never overpowers. Group favorite of the three cheeses tasted. Reminds me of other alpine cheeses but didn't quite separate from the pack. Have tried their Appalachian and loved it. Janet Fletcher called it an exceptional American mountain cheese. Would buy again.
