Tulip Tree Creamery, Indianapolis, Indiana. Double cream, beer-washed rind, pasteurized cow milk. 8 oz square. Lot 02062026, packed 03-02-26. Good Food Awards winner 2024. Rind washed with Hubbard & Cravens Porter from Thr3e Wise Men Brewing. Paste is soft but holds shape, lovely multi cream melt with citrus notes. Aroma is light farmhouse and hay, earthy but not mushroomy. Rind bitterness from the porter wash is punchy and dominates the aftertaste. Second piece amplifies the funk and bitterness. Barrel-aged hot honey pairing balanced the funk beautifully, heat plus sweetness worked. The cheese caused real debate at the table. Interesting and dynamic but the rind bitterness hurt the balance score. Gift from a friend, sourced from Grey's Fine Cheese in Nashville. First Tulip Tree cheese tried. Miss Cheesemonger called it one of the most stunning American cheeses. Would buy again for the conversation it starts.
