Light traditional bloomy rind flavors — very little ammonia or barnyard, which makes you lean in to find what is there. Over a few minutes a salty and buttery aroma emerges, plus some light citrus that takes time to notice. The paste has great gradation with about 2mm of depth from the multi-week aging and triple cream nature. The rind is not bitter with a great natural waxiness. Near the center the paste adds unexpected funk layered with salinity and butteriness — combined with the rind you get this silky texture against the waxy rind that creates an explosion of flavor and mouthfeel lingering 20-30 seconds after each bite.
